Making Pork-Stuffed Bamboo Shoots from Freshly Harvested Bamboo Shoots | Rural Life in Vietnam

Welcome to Trieu Tam Tam! Experience authentic rural life in Vietnam as I head into the forest to harvest fresh bamboo shoots. During this season, bamboo shoots grow everywhere and many of them are surprisingly large. After filling my basket, I take some of the fresh bamboo shoots to the village market to sell and keep the rest at home to prepare a delicious traditional dish — stuffed bamboo shoots with pork. First, I carefully peel away the tough outer layers of the bamboo shoots and boil the tender parts until cooked. While the bamboo shoots are boiling, I finely chop the pork and stir-fry it before mixing it with chopped Vietnamese coriander, eggs, flour, and seasonings to create a flavorful filling. Next, I carefully stuff the pork mixture inside the prepared bamboo shoots. I arrange all the stuffed bamboo shoots neatly in a large pot and steam them over the stove until everything is fully cooked. The combination of tender bamboo shoots and savory pork filling creates a simple but delicious countryside dish. Before packing the stuffed bamboo shoots into a bucket to take to the village market, I taste one myself. It is truly delicious! Since this traditional dish takes time to prepare and is not available every day, many customers are excited to buy it. The stuffed bamboo shoots sell out very quickly, making all the work worthwhile.
