Creamy Milk Tart Recipe Crust Option 1: (Short Crust Style) 2 cups cake flour ½ cup margarine (cold and cubed) ½ – 1 level tsp salt 2 tsp sugar (if you prefer a sweeter crust) 1 level tsp baking powder (optional) 6 – 8 tbsp ice-cold water Method: Combine dry ingredients. Rub in margarine with fingertips until it resembles breadcrumbs. Gradually add ice water until a dough forms. Press thinly into a greased tart tin. Prick with a fork and bake at 180°C for 10 – 12 minutes or until light brown. Crust Option 2: (Softer Batter Style) ½ cup soft margarine 1 large egg 1 cup cake flour 1 tsp baking powder a pinch of salt 2 tsp sugar (optional) Approximately 80ml milk (room temperature) Method: Mix everything into a dough and press thinly into a tart dish. Bake at 180°C for 10 – 12 minutes until light brown. The Creamy Filling: ½ cup margarine or butter 3 cups milk ½ cup corn flour (Maizena) 4 egg yolks a pinch of salt 1 tsp vanilla essence 3 – 4 tbsp sugar (to taste) 250 ml cream Instructions: Heat the Liquids: Place the milk and margarine/butter in a saucepan. Heat until the butter has melted and the milk is warm (do not let it boil!). Mix the Base: In a separate bowl, whisk together the cornflour, egg yolks, salt, vanilla, sugar, and cream until well combined. Temper & Thicken: Add a little of the warm milk mixture to the cream mixture and whisk well. Pour everything back into the saucepan. Cook: Whisk continuously over medium heat until it boils. I continue stirring for a further 1 – 2 minutes to ensure it's thick and smooth. Set: Pour the warm filling over your chosen baked crust (or even over crushed Tennis biscuits mixed with melted margarine). Finish: Sprinkle generously with ground cinnamon and refrigerate for 3 – 4 hours until ice-cold. Enjoy!
