Known for its rich texture and complex aroma, it consists of minced meat (traditionally beef or mutton, though chicken is also popular) and split Bengal gram lentils (chana dal), slow-cooked together with whole aromatic spices, then ground into a smooth paste, shaped into patties, and pan-fried until golden and crisp.
