ప్రెషర్ కుక్కర్‌లో సింపుల్ మామిడికాయ పప్పు – ఆంధ్రా స్టైల్ వేడి వేడి అన్నంలో నెయ్యి వేసుకుని తింటే ఎంతో రుచిగా ఉండే పుల్లటి మామిడికాయ పప్పు. ప్రెషర్ కుక్కర్‌లో చాలా సులభంగా తయారు చేసుకోవచ్చు. కావలసిన పదార్థాలు కందిపప్పు – 1 కప్పు పచ్చి మామిడికాయ – 1 మీడియం సైజు ఉల్లిపాయ – 1 (ఇష్టమైతే) పచ్చిమిర్చి – 4 పసుపు – ¼ టీ స్పూన్ కారం – ½ టీ స్పూన్ (ఇష్టమైతే) ఉప్పు – తగినంత నీళ్లు – 3 కప్పులు పోపు కోసం నూనె లేదా నెయ్యి – 2 టేబుల్ స్పూన్లు ఆవాలు – ½ టీ స్పూన్ జీలకర్ర – ½ టీ స్పూన్ ఎండుమిర్చి – 2 వెల్లుల్లి రెబ్బలు – 5 (దంచినవి) కరివేపాకు – 1 రెమ్మ ఇంగువ – చిటికెడు తయారీ విధానం 1. కందిపప్పును శుభ్రంగా కడిగి ప్రెషర్ కుక్కర్‌లో వేసుకోవాలి. 2. అందులో మామిడికాయ ముక్కలు, పచ్చిమిర్చి, ఉల్లిపాయ ముక్కలు, పసుపు, కారం, నీళ్లు వేసి బాగా కలపాలి. 3. కుక్కర్ మూత పెట్టి మీడియం మంటపై 3–4 విజిల్స్ వచ్చే వరకు ఉడికించాలి. పప్పు మెత్తగా ఉడికిన తర్వాత స్టవ్ ఆఫ్ చేయాలి. 4. ప్రెషర్ పూర్తిగా తగ్గిన తర్వాత కుక్కర్ మూత తీసి పప్పు, మామిడికాయ ముక్కలను గరిటెతో మెత్తగా మెదపాలి. 5. ఇప్పుడు ఉప్పు వేసి బాగా కలపాలి. పప్పు చిక్కగా ఉంటే కొద్దిగా వేడి నీళ్లు పోసి 2–3 నిమిషాలు మరిగించాలి. 6. చిన్న బాణలిలో నూనె లేదా నెయ్యి వేడి చేసి ఆవాలు, జీలకర్ర, ఎండుమిర్చి, దంచిన వెల్లుల్లి, కరివేపాకు, ఇంగువ వేసి వేయించాలి. 7. వెల్లుల్లి బంగారు రంగులోకి వచ్చిన తర్వాత ఈ పోపును పప్పులో వేసి బాగా కలపాలి. 8. స్టవ్ ఆఫ్ చేసి వేడి వేడి మామిడికాయ పప్పును సర్వ్ చేసుకోవాలి. సర్వింగ్ వేడి వేడి అన్నంలో మామిడికాయ పప్పు, నెయ్యి, అప్పడంతో కలిపి తింటే చాలా రుచిగా ఉంటుంది. చిట్కా: మామిడికాయ ఎక్కువ పుల్లగా ఉంటే కొంచెం తక్కువగా వేసుకోవాలి. పులుపును బట్టి మామిడికాయ పరిమాణాన్ని సర్దుబాటు చేసుకోవాలి. Wash the toor dal thoroughly and add it to the pressure cooker. 2. Add chopped raw mango, green chillies, onion, turmeric powder, red chilli powder and water. 3. Mix well and pressure cook for 3–4 whistles on medium flame, until the dal becomes soft. 4. Allow the pressure to release naturally. Open the cooker and mash the dal and mango gently. 5. Add salt and adjust the consistency with a little hot water. Simmer for 2–3 minutes. 6. Heat oil or ghee in a small pan. Add mustard seeds, cumin seeds, dry red chillies, crushed garlic, curry leaves and hing. 7. Fry until the garlic turns golden, then pour the tempering over the mango dal. 8. Mix well and switch off the flame. Serving Suggestion Serve hot with steamed rice, a spoonful of ghee and papad. Tip: Adjust the quantity of raw mango according to its sourness. If the mango is very sour, use a smaller quantity.
