French apple cake 🍎 🛒 INGREDIENTS: • Apples — 3 medium (preferably 2 tart + 1 sweet) (peeled and diced) — 3 medium • Unsalted butter (softened) — 100 g • Light brown sugar — 135 g + 1 tsp for the apples • Eggs (room temperature) — 3 large • Vahiné vanilla flavor — 1,5 tsp • All-purpose flour — 200 g • Baking powder — 6–8 g • Salt — a pinch • Vodka — 1–2 tbsp 👩‍🍳 INSTRUCTIONS: For a nicely balanced flavor, it's best to use 2 tart apples and 1 sweet apple. Peel and dice them, then place them in a bowl. Place the diced apples in a bowl. Mix 1–2 tbsp of vodka with 1 tsp of sugar and pour over the apples. Toss well and let them sit for 5–10 minutes while preparing the batter. In a large bowl, beat the softened butter and 135 g of light brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Add the vanilla and mix briefly. Add the Dry Ingredients: Sift the flour, baking powder, and salt into the wet mixture. Gently fold with a spatula just until combined. Do not overmix. Gently fold the diced apples into the batter. Bake: Grease a 20–22 cm (8–9 inch) cake pan with butter, dust with flour. Transfer the batter to the pan and bake in a preheated oven at 175–180°C (350–355°F) for 40–50 minutes, until golden brown and a toothpick inserted into the center comes out clean. Let the cake cool before removing it from the pan. Dust with powdered sugar, if desired.
