Your pork chops aren't ruined in the pan. They're ruined at the meat counter, and in the last few minutes. It was never you. Today I count down seven old tricks for juicy pork chops made for two, from what to look for on the package to my Nonna's vinegar peppers, the South Philly way she finished every chop. In your house, were the vinegar peppers hot or sweet? And who made the pork chops growing up? Tell me in the comments, and tell me what town you're cooking in today. Under an hour. 2 bone-in pork chops (rib or center-cut), 1 to 1 1/2 inches thick, with no added solution if you can find them Salt and pepper 1 tbsp olive oil, plus a little more 1 small onion, thinly sliced 1 red bell pepper, cut in strips 3 to 4 jarred cherry peppers (hot or sweet), stems off, sliced 4 garlic cloves, sliced 1/2 cup chicken broth 3 tbsp vinegar from the pepper jar, plus more to taste A little chopped parsley Pan: a 10- or 12-inch heavy skillet with a lid. METHOD 1. Make 2 small cuts through the fat edge of each chop, about 2 inches apart, just through the fat. Pat the chops very dry. Salt and pepper them right before cooking (go light on the salt if the label says "added solution"). 2. Heat the oil over medium-high until it shimmers. Lay the chops in, away from you. Sear 4 to 6 minutes without moving them, until deep golden; press the center down if it puffs up. Turn and cook about 1 minute more. Set them on a plate. 3. Turn the heat to medium (add a little oil if the pan is dry). Cook the onion and bell pepper 6 to 8 minutes, until soft and golden. Add the cherry peppers and garlic and stir about 30 seconds. 4. Pour in the broth and the jar vinegar (step back, the steam is sharp) and scrape up every brown bit. 5. Return the chops with their juices. Cover, turn the heat to low and cook usually 6 to 10 minutes, until the thickest part reads 145°F; start checking at 6. Move the chops to clean plates with clean tongs and rest 3 minutes. 6. Taste the sauce. Too sharp? Add a splash of broth or water. Want it brighter? One more spoonful of jar vinegar. Spoon the peppers over the chops, add parsley and serve with crusty bread or boiled potatoes. THE FIXES Curled up like a bowl? Make the two little cuts in the fat edge. Pale, with no crust? The chop was wet, the pan wasn't hot enough, the chops were crowded, or it was the kind with salt water added. Dry? It went past 145°F. Next time, start checking sooner. Sauce too sharp? A splash of water calms it right down. LEFTOVERS Refrigerate within 2 hours (1 hour on a hot day) and eat within 3 to 4 days. Reheat the chop and peppers in a covered pan with a splash of water over low heat until steaming hot, 165°F in the middle. Or freeze the chop and peppers together for 2 to 3 months. Second supper: slice a leftover chop thin, warm it with the peppers and pile it on a crusty roll. Food-safety source: USDA Food Safety and Inspection Service (FSIS). Next time: pizza for two, in your own oven, and the one thing my Nonna did to the dough the night before. About this channel: Ada is a fictional AI presenter, and her family stories are made up.
