Peel and finely chop 2 apples. 2. Heat ghee in a kadai. 3. Add chopped nuts (raisins, cashews, almonds) and roast lightly until golden. 4. Add the chopped apples and cook on medium heat until they become soft. 5. Add jaggery powder, mix well, and cook for 2–3 minutes until the excess moisture evaporates. 6. Add cinnamon powder cardamom powder and salt and mix well. 7. Finally, add desiccated coconut and cook for another 1–2 minutes. 8. Let the filling cool completely before using it to fill the gujiyas. 9. Take two bowls and divide the refined flour equally between them. 10. Add ghee to both bowls. 11. In the first bowl, add semolina and mix well. 12. Add water gradually and knead to make a smooth, firm dough. This will be the plain dough. 13. In the second bowl, skip the semolina and add rose syrup along with a little water as needed. 14. Knead well to make a smooth dough. This will be the rose dough. 15. Cover both doughs and let them rest for 15–20 minutes. 16. Divide both the plain and rose dough into small, equal-sized balls. 17. Take one ball of the plain dough and roll it out like a thin roti. 18. Take one ball of the rose dough and roll it out to the same size. 19. Place the rose layer on top of the plain layer to create a double-layered sheet. 20. Add the prepared apple pie filling in the centre. 21. Fold the dough over the filling to form a half-moon-shaped gujiya. 22. Seal the edges firmly and press with your fingers. 23. Make decorative marks/designs along the edges to seal and give the gujiya a beautiful finish. 24. Preheat the oven to 180°C. 25. Meanwhile, arrange the prepared gujiyas on a baking tray 26. Brush a little butter over the top of each gujiya. 27. Place the tray in the preheated oven. 28. Bake at 180°C for 22–23 minutes, or until the gujiyas turn lightly golden and crisp. 29. Remove from the oven and let them cool slightly before serving. 30. Drizzle a little rose syrup over the rabdi. 31. Garnish with chopped nuts 32.
