Plain rice is lovely, but this Japanese mixed rice gives you carrot, mushrooms, and bright edamame in the same savory bowl. The key is to measure the seasoning as part of the cooking liquid, leave the vegetables on top while the rice cooks, and fold in the edamame at the end.
TAKIKOMI GOHAN — ABOUT 4 SIDE SERVINGS
Use 1½ standard US cups uncooked Japanese short-grain rice (about 2 Japanese rice-cooker cups), 1 medium carrot, 4 oz sliced shiitake or cremini mushrooms, 1 cup frozen shelled edamame, 1 tbsp soy sauce, and 1 tbsp mirin. Add unsalted dashi or low-sodium vegetable broth until the TOTAL liquid, including soy sauce and mirin, measures 1⅔ standard US cups.
Rinse, soak for 20–30 minutes, and drain the rice. Put it in a rice cooker or heavy lidded pot with the measured liquid. Scatter carrot and mushrooms on top without stirring them into the grains. Cook using your machine's mixed-rice or white-rice instructions, or bring the covered stovetop pot to a boil, reduce to very low heat for roughly 15 minutes, and rest covered for 10 minutes. Cook edamame separately according to its package. Fluff the rice and fold in the hot edamame. Follow your rice package or machine where its directions differ.
This is a more varied rice dish, not a medical claim about white rice or blood sugar. Edamame and soy sauce contain soy; many soy sauces contain wheat. Refrigerate in shallow containers within 2 hours at 40°F or colder, use within 3–4 days, and reheat leftovers to 165°F.
What vegetable would you try on top of your first pot?
