Today we're making a wonderful traditional Mangalorean Chicken Curry with a freshly ground masala paste. There are no ready-made curry powders and no garam masala powder in this recipe—the beautiful flavour comes from freshly roasted and ground spices, coconut milk and tender chicken.
Mangalorean cuisine is known for its wonderfully aromatic coastal curries, and coconut is an important part of this style of cooking. We even take a little journey to Mangalore in this video, where the coconut palms remind us why coconut features so beautifully in many traditional coastal recipes. 🌴🥥
The result is a rich, silky and delicious Chicken Gravy that is perfect for soaking into steaming hot rice.
And this curry is wonderfully versatile! The next day, we enjoyed it with hot dosas and soft, melt-in-the-mouth idlis—and the idlis simply soaked up that delicious chicken gravy. We honestly felt greedy for more! 😄❤️

Ingredients for Mangalorean Chicken Curry:
Marination:
Chicken - 1 kilo
Ginger garlic paste - 1 Tblsp
Turmeric powder - 1/4 tsp
Salt - 1 tsp
For Roasting:
Freshly grated coconut - 1 Cup Poppy seeds/ Khus Khus - 1 tsp
Fenugreek seeds/ Methi - 1/4 tsp
Fennel seeds - 1/2 tsp
Cumin seeds - 1 tsp
Coriander seeds - 2 Tblsps
Peppercorns - 1 tsp
Tamarind - 10 gms, ( 1 marble sized ball)
Bedgi dry Red Chillies - 12
Onion - 1 ( 75gms)
Garlic cloves - 10 to 12
Cinnamon - 2 small pieces
Cloves - 5
Cardamom - 4
Turmeric powder - 1/2 tsp
Oil - 1 Tblsp
(Water for grinding - 1 + 1/2 Cups add little by little and grind.)
Main Cooking:
Ghee - 2 Tblsps
Oil - 2 Tblsps
Onions - 2 (150 gms)
Tomato - 1 ( 40 to 50 gms)
Curry leaves - 2 Sprigs
Thick Coconut milk - 1 Cup
Tadka:
Ghee - 1 Tblsp
Onion - 25 gms
Salt - Add as per your requirement & taste.
