Prep the Pumpkin: Peel the tough outer skin of the fresh pumpkin using a vegetable peeler. Slice in half, scoop out the fibrous seeds and pulp, and dice the vibrant orange pumpkin flesh into small, uniform cubes. 2. Sauté the Onion and Pumpkin: • Heat a swirl of cooking oil in a skillet over medium heat. • Add the finely diced white onion and sauté until translucent and fragrant. • Toss in the diced pumpkin cubes, season with black pepper and a pinch of chili powder, pour in a splash of coconut milk and water, and stir-fry until the pumpkin pieces are tender and fully cooked. 3. Rinse the Chickpeas: Rinse 100 grams of canned chickpeas through a fine-mesh strainer and let them drain thoroughly. 4. Blend into Silky Hummus: • Transfer the drained chickpeas, cooked pumpkin and onion mixture, and fresh parsley into a high-speed blender. • Add the rich tahini paste, extra virgin olive oil, and a splash of coconut milk for supreme creaminess. • Blend on high until the mixture transforms into a completely smooth, velvety-green golden hummus paste with zero lumps. 5. Plate and Swirl: Scrape the luscious pumpkin hummus onto a wide shallow serving plate. Use the back of a wooden spoon to carve a gentle decorative well in the center. 6. Garnish and Serve: • Drizzle extra virgin olive oil and a splash of coconut milk into the center well. • Top with whole chickpeas, a sprinkle of fresh parsley, and a dusting of smoked paprika. • Serve immediately with warm toasted bread, crackers, or crispy rice crackers for dipping! --------------------------------------------------- HEALTH & NUTRITION HIGHLIGHTS: • Pumpkin is rich in beta-carotene, vitamin A, and powerful antioxidants that support immune defense and skin radiance. • Chickpeas and Tahini provide an excellent source of plant-based protein, iron, and heart-healthy fats for sustained morning energy. #chickensalad #highprotein #highproteinmeals #proteinpacked #chickensaladrecipe #chickpeasalad #chickpeas #mealprep #mealprepideas Thank you for watching the video to the end ❤️ Turn on notifications to see my new recipes first 🔔
