Each portion of dough is kneaded until it reaches the right consistency, then carefully shaped into a 40 cm long log. For the marble cookies, the plain and cocoa doughs are kneaded separately, layered together, and then shaped into a single log. It may look like a simple process, but shaping the dough evenly while preventing air pockets from forming inside the cookies requires careful handling and skill. There is nothing flashy about this work. It is simply the same process, repeated over and over. This kind of quiet, repetitive preparation is also a part of a pastry chef’s everyday work. Since 24 cookie logs are shaped in one session, this is a longer video.
