The cooks who lived through the Great Depression knew a secret we've mostly forgotten: they stretched the meat, not just the money. A quarter pound of beef, two hot dogs or one ham bone went into a pot with potatoes, beans, cabbage, noodles or rice, and became a filling dinner. These 10 Depression-era dinners were really cooked in American kitchens in the 1930s, and they're still cheap and filling today. Each one is sized for one person, with a little left for tomorrow.
In this video:
1. Creamed Chipped Beef on Toast
2. Hoover Stew (named after the president)
3. Porcupine Meatballs
4. Navy Bean Soup (served in the U.S. Senate for over 100 years)
5. Poor Man's Meal
6. Haluski (Cabbage and Noodles)
7. Fried Bologna Sandwich
8. Red Beans and Rice
9. Welsh Rarebit (there's no rabbit in it)
10. Pasta and Peas
Depression-era kitchen tips:
Use meat as the flavoring, not the main event.
Rinse jarred dried beef to wash off some of the salt.
Forgot to soak your beans? Boil them for 2 minutes, then cover and leave them for an hour.
Cut a few slits around the edge of bologna before frying so it stays flat.
Cook cabbage slowly in butter instead of boiling it. It turns sweet instead of smelling of sulfur.
Every recipe includes substitute tips, so you can make it with what's already in your kitchen.
Which Depression dinner did your mother or grandmother make, and what did she call it? Tell me in the comments. Your family recipe might become a future video. And if you're cooking for one, subscribe. We keep finding the meals worth making for one person.
