Hi friends! 💚 Today we're making one of our family's favorite dinners — a Mexican-style HIGH-PROTEIN Chicken Crust Pizza with an incredible 213 g of protein in the whole pizza! 💪🍕
Instead of traditional pizza dough, the crust is made with chicken breast, egg, and Parmesan, then loaded with melted cheese, fresh Mexican-style salsa, and a creamy lime sauce. My wife makes this one for us all the time, and somehow we never get tired of it!
✅ You'll need: for the Chicken Crust:
1.5 lb (700 g) chicken breast
1 large egg
1/3 cup (30 g) grated Parmesan
Salt & black pepper
Pinch of paprika
Pinch of garlic powder
1 bay leaf
A few black peppercorns
Olive oil spray
✅ For the Pizza toppings:
2 Tbsp (30 g) tomato paste
1/3 cup (80 ml) water
1 cup (100 g) light shredded mozzarella & cheddar blend
✅ For the Fresh Mexican-Style Salsa:
1 large tomato
1 medium cucumber
1/2 small red onion
Small bunch of cilantro or parsley
1/2 head lettuce
About 1/3 hot pepper
1/4 lime (about 1 Tbsp / 15 ml juice)
✅ For the Yogurt Sauce:
3 Tbsp (45 g) low-fat plain yogurt
1 Tbsp (15 g) light mayonnaise
1/4 lime (about 1 Tbsp / 15 ml juice)
Pinch of salt
Pinch of chili flakes
Pinch of paprika
Pinch of garlic powder
👨🍳 How to make it:
→ Boil the chicken breast with salt, peppercorns, and bay leaf for about 30 minutes.
→ Combine the cooked chicken with the egg, Parmesan, and seasonings. Mix until finely shredded and well combined.
→ Press the chicken mixture into an even round crust on a parchment-lined pizza pan.
→ Lightly spray with olive oil and bake at 375°F (190°C) for 15 minutes.
→ Mix the tomato paste with water and spread it over the chicken crust.
→ Top with the mozzarella and cheddar and bake for another 10 minutes at 375°F (190°C).
→ Finely chop the tomato, cucumber, red onion, herbs, lettuce, and hot pepper. Add fresh lime juice and toss everything together.
→ For the creamy lime sauce, mix the yogurt, light mayonnaise, lime juice, and seasonings.
→ Let the pizza cool slightly, then pile the fresh salsa on top and drizzle generously with the creamy lime sauce.
→ Slice into 8 pieces and enjoy! 💚
