Ingredients
Chickpeas (1/4 cup)
Soya chunks (1/2 cup)
Carrot (1)
Onion (1)
Green chilli (1)
Coriander leaves
Besan (2 tbsp)
Salt
Turmeric
Cumin powder
Red chilli powder (1/2 tbsp)
Chutney
Mint leaves
Coriander leaves
Garlic
Salt
Cumin powder (1 tsp)
Green chilli (1)
Yogurt (1/4 cup)
Method
1. Soak the chickpeas overnight. Wash and rinse them a couple of times, then boil until soft.
2. Switch off the flame and add the soya chunks along with chopped carrot to the hot water. Let them soften.
3. Squeeze out all the excess water from the soya chunks and keep them aside.
4. In a chopper, add onion, coriander leaves and green chilli and coarsely blend.Add the carrot, soya chunks and boiled chickpeas. Blend until you get a smooth, cohesive mixture.
5. Transfer the mixture to a bowl. Add besan, turmeric, salt, cumin powder and red chilli powder. Mix everything well.
6. For the creamy chutney, blend mint leaves, coriander leaves, green chilli, garlic, salt, cumin powder and yogurt until smooth and creamy.
7. Shape the chickpea-soya mixture into small balls.
8. Heat an appe pan, lightly grease the cavities with oil and place the balls inside. Cook, turning gently, until they are evenly light golden on all sides.
Serve warm with the creamy mint chutney. 💚
