Muffin Recipe- 1978 Betty Crocker Cookbook:
Makes 12 small muffins
1 egg
3/4 cup milk
1/2 cup oil
2 cups all purpose flour
1/3 cup sugar
3 teaspoons baking powder
1 teaspoon salt
For blueberry muffins: 1 cup blueberries, tossed with flour.
For Ginger Pistachio Muffins: 1/3 cup chopped pistachios and 1/4 cup chopped fresh or candied ginger.
1. Heat oven to 400F.
2. Add paper liners to a muffin tin & grease them with pan spray.
3. In a medium bowl, beat egg, then add in milk & oil.
4. Stir in the dry ingredients just until incorporated, don’t overmix.
5. Gently fold in blueberries or other mix-in.
6. Portion into muffin cups and fill 2/3 full.
7. Bake 15-20 minutes or until a toothpick inserted in the center of a muffin comes out clean. Enjoy! 😊
