Prepare the Marinade In a large pot or mixing bowl, combine 3 cups buttermilk, 1 cup mineral water, 2 tbsp salt, and 1 tbsp melted butter. Stir in 1/2 tsp garlic paste, 1 tsp peppercorns, 1 tsp coriander seeds, 1 tsp yellow mustard seeds, 1 tbsp dried basil, and the bay leaf. Submerge your meat/turkey leg fully into the marinade. Cover and refrigerate for at least 4–6 hours (or overnight for maximum tenderness and flavor). 2. Prep & Toss the Veggies Preheat your oven to 325°F (160°C). Peel and chop the butternut squash, carrots, red beets, golden beet, and finely grate/slice the fresh turmeric root into uniform bite-sized pieces. In a small bowl, whisk together the veggie sauce: 3 tbsp olive oil, 1 tbsp red wine vinegar, 1 tbsp garlic paste, 1 tsp whole grain mustard, 1/2 tsp cherry pepper spread, and 1 tbsp salt. Place all chopped vegetables on a baking tray or roasting pan, pour the sauce over them, and toss thoroughly until evenly coated. 3. Roast & Finish 325°F (160°C) for 2-3 hours Arrange the marinated meat alongside (or over) the seasoned vegetables in your roasting dish. Roast in the oven until the meat is thoroughly cooked, tender, and golden-brown, and the root vegetables are caramelized and fork-tender (approx. 45–60 minutes depending on size). In the final 5–10 minutes of roasting, sprinkle the chia seeds and pumpkin seeds over the dish to toast lightly. Remove from the oven, dust with 1/2 tsp cayenne pepper, and garnish with fresh chives and dried parsley before serving warm. & don't forget to add your ❤️ PAID LINKS "As an Amazon Associate I earn from qualifying purchases" https://amzn.to/4q5OhPO
