Welcome back to the Back Porch Kitchen! Today we’re making a big, comforting bowl of Stuffed Bell Pepper Soup — all the cozy flavors of stuffed bell peppers turned into a hearty, satisfying soup. Stuffed Bell Peppers Soup 2-lbs lean ground beef 2 Tablespoons olive oil Salt and ground black pepper to taste 2 yellow onions chopped (2 -3 cups) 1 large red bell pepper (diced into 3/4 inch pieces 2 large green bell peppers diced into 3/4” pieces 3 cloves garlic, minced 2 (14.5 oz) cans petite diced tomatoes with juice 2- (15 oz) can tomato sauce 2- Cups tomato juice 2 heaping tablespoons of beef better than bouillon paste 4 Tablespoons chopped fresh parsley, plus more for garnish 1- tablespoon dried basil 1- tablespoon dried oregano 2- tablespoons of Tony’s creole seasoning 1-tablespoon garlic powder 1-tablespoon onion powder 1-teaspoon red pepper flakes 2 cups cooked long grain white rice Cheddar, Parmesan or Mozzarella cheese, for garnish if desired Instructions In a large pot heat olive oil over medium heat, once hot add beef to pot and season with salt and pepper. Cook, stirring occasionally while breaking up beef, until browned. Add onions, red bell pepper, green bell pepper and saute 5-6 minutes then add garlic and saute 30 seconds longer Drain beef and vegetables mixture. Pour in diced tomatoes, tomato sauce, beef bouillon paste, parsley, basil, oregano, onion powder, garlic powder, red pepper flakes and Tony’s. Stir until all ingredients are well combined. Bring just to a light boil, then reduce heat to low, cover and simmer, stirring occasionally. Let simmer for an hour and a half While soup simmers, prepare rice according to package directions. When soup is done simmering serve over a bowl of rice or mix cooked rice into the pot just before serving Delicious! Warm! & Comforting!
