The real old fashion way to make Italian Calabrese sausage. You may use the same recipe for Italian Soppresata Salami. The Sauce I'm using I get from Costco its called Travaglini Vegetable & chili sauce The casings are PS Seasoning Hog casings in salt. I buy mine at Bass pro or order online.
