Being someone who enjoys home-cooked meals, meal prep is what I depended on so that I can have it for most weekdays.
When I first started doing meal preps, I used the same basic ingredients and made some tweaks to the flavours of the main course to save some time and hassle of food prepping. Follow along with this video as I share how you can do it too!
Full recipe
Ingredients:
For the chicken
Bonless chicken thigh 2 pieces
Cut into bite-size pieces and marinate with the ingredients below:
Ginger (Minced or grated) 1 tsp
Garlic (Minced or grated) 1 clove
Light soy sauce 2 tbsp
Cooking wine 1 tbsp
Sesame oil 1 tsp
Ground pepper ¼ tsp
Separately:
*For portion 2
Honey 1 tbsp
*For portion 3
Sesame seed a dash
Sesame oil a dash
Korean red pepper 1 tsp
Gochujang 1 tsp
(or just freshly cut chilli as another option)
For the vegetables
Cabbage ¼ of a whole
Carrot (matchsticks) ¼ cup
Mushrooms small handful
Garlic 2 cloves
Salt 1 tsp
For the egg roll
Egg 3
Salt a pinch
Cooking:
Vegetables
1. Heat up the oil in pan over medium heat.
2. Add in the chopped garlic, and give a quick stirfry after each addition of the following vegetables:
julienned carrots
sliced mushrooms
sliced cabbage
3. Seasoned with salt and stir-fry till fully cooked, set aside to cool.
Meat
1. Heat a tablespoon of oil in the pan over medium heat, cook the chicken separately in 3 batches.
Batch 1: stir-fry this portion till fully cooked, then set aside.
Batch 2: Add a tablepoon of honey and stir-fry till fully cooked, set aside.
Batch 3: Add Korean red pepper and gochujang (or just freshly cut chilli), stir-fry till fully cooked and set aside.
Egg Roll
1. Beat up 3 eggs and add a pinch of salt.
2. Lightly oil the pan and heat it over medium heat.
3. Remove excess oil with kitchen paper.
4. Pour a layer of egg batter into the pan and ensure the surface is covered, fold in the egg towards you when the egg batter is half-cooked.
5. Lower the heat if the pan gets too hot. Pour a second layer into the pan, ensuring the pan is fully covered and this batter joins the first rolled up egg batter, repeat the rolling.
6. Repeat the above step until all the egg batter is used up.
7. After the egg roll is cooked, remove from pan and divide into 6 pieces.
Assembling:
If you are eating a portion now, plate one flavor of the chicken you would like to eat, together with a third of the vegetables and 2 pieces of the egg roll.
Store the second portion in a bento box if you are eating it the next day and keep in the chiller section.
If you are only eating it later in the week, store each serving in separate freezer safe containers. Thaw in the chiller section the night before and heat up in the microwave.
Bon apetite!
