A simple bowl of gyudon is one of Japan’s greatest comfort foods. Thinly sliced beef and onions simmered in a sweet and savory sauce, served over hot rice — simple, nostalgic, and deeply satisfying. 🍚🥢

Gyudon (Japanese Beef Bowl) - Serves 2
Ingredients
250g thinly sliced beef (about 9 oz)
1/2 large onion (150g / 5.3 oz)
10g ginger (about 2 tsp julienned)
Sauce
200ml water (about 3/4 cup + 1 tbsp)
3 tbsp sugar
4 tbsp soy sauce (60ml / 1/4 cup)
50ml sake (about 3 tbsp + 1 tsp)
50ml mirin (about 3 tbsp + 1 tsp)
To Serve
Steamed rice
Pickled red ginger (beni shoga)
Shichimi togarashi (Japanese seven spice)
Instructions
1. Cut the beef into bite-sized pieces.
2. Slice the onion into 1cm wedges and julienne the ginger.
3. Add the water and seasonings to a pot, then add the onion and ginger.
4. Bring to a boil, then add the beef. Skim off any foam and simmer gently for about 20 minutes.
5. Taste and adjust the seasoning with additional soy sauce or sugar if needed.
6. Serve over bowls of rice and top with pickled red ginger and shichimi togarashi if desired.
