There’s nothing more comforting than a bowl of homemade Tonjiru (豚汁). This hearty Japanese pork and vegetable miso soup is packed with seasonal root vegetables, tender pork belly, tofu, and mushrooms, making it a complete meal that’s both nourishing and deeply satisfying.
In this video, Yoshiko shares her authentic family recipe for tonjiru and explains the simple techniques that create a rich, flavorful soup using everyday Japanese ingredients. Perfect for cold weather—or anytime you’re craving Japanese home cooking.
Ingredients (Serves 4)
100 g (3.5 oz) pork belly, thinly sliced
2 taro potatoes (satoimo)
50 g (1.8 oz) daikon radish
¼ carrot
⅓ burdock root (gobo)
¼ onion (about 50 g / 1.8 oz)
2 fresh shiitake mushrooms
50 g (1.8 oz) firm tofu
Dashi stock
Miso
Instructions
1. Peel and cut the vegetables into bite-sized pieces.
2. Slice the pork belly into easy-to-eat pieces.
3. Bring the dashi to a simmer and cook the pork, skimming off any foam.
4. Add the taro, daikon, carrot, burdock, onion, and shiitake mushrooms. Simmer until the vegetables are tender.
5. Add the tofu and heat through.
6. Turn the heat to low and dissolve the miso into the soup. Avoid boiling after adding the miso to preserve its flavor.
7. Serve hot and enjoy!
