Hi there!!! This soup is absolutely amazing! It’s comforting and it’s healthy! I try to use frozen vegetables which are fresh and fresh carrots & celery! You can use any meat of your choice! It’s just a budget friendly soup that freezes well! It’s not always the same recipe but here is what I put in mine: 1 pound ground beef 2 ribs sliced celery 2 onions 1 1/2 cups carrots- fresh or frozen 1 - 28 oz can of tomatoes diced 1- 15 oz (I think) diced tomatoes- I like using fire roasted but I was out 1 can shoe peg sweet corn 1/2 bag frozen corn 1 bag frozen green peas Also- partial bag I had of green peas 1 bag frozen baby Lima beans 1 cup macaroni noodles- you can use potatoes 2-3 tbs chicken bouillon or 1-2 containers chicken or beef broth Salt & pepper A dash of fennel seed- it can be overpowering- so be cautious I like chopped cabbage and okra in this soup but I was making the soup for my father in law… Prep your veggies- onions, carrots & celery Sauté these for 15 min Cook beef/ or chicken Drain Then start building your soup seasoning with salt & pepper In large pot, add your sautéed vegetables Then add bouillon powder or broth Add cooked beef Then I add 6 cups water or use the amount of water you need. Then I add frozen and canned vegetables I cook soup for several hours on low simmer until carrots are soft or you can push a fork thru. Last I add macaroni noodles or potatoes after the soup is done. About the last hour. You can use any of your favorite vegetables! This soup is wholesome and all you taste are the delicious vegetables! Add as much beef as you want! Make this your signature soup!!! You can add spinach or any type greens! Serve with grilled cheese or just plain crackers! I hope you make this soup!
