Summer Watermelon Salad
Ingredients
2 TBSP lime juice
1-2 TBSP grated fresh ginger
¼ tsp salt
¼ tsp black pepper
4 cups cubed seedless watermelon
1½-2 cups cherry tomatoes, cut in half
½ cup slivered red onion
1 green jalapeno pepper, chopped
2 TBPS dried basil
1-2 TBSP coarsely chopped fresh mint
Sprinkle of white sesame seeds
Directions:
1. In a small bowl whisk together lime juice, ginger, salt, and pepper.
2. Place the cubed watermelon in a large bowl, then gently smash with a potato masher to release the juices. In a separate bowl place the cut tomatoes and gently smash with a potato masher until the tomatoes release their juices.
3. Gently combine the watermelon, tomatoes and lime juice mixture.
4. Next stir in chopped onion, jalapeno pepper, basil and mint until coated. Taste and add more lime juice, salt, or black pepper if desired.
4. Transfer to a shallow serving bowl and sprinkle with sesame seeds. Serve immediately if desired. I have found that allowing the salad to chill in the refrigerator for a couple of hours before serving allows the flavors to marinade throughout.
Option: Leave out the sesame seeds and sprinkle on the salad just prior to serving if you plan to make this salad ahead and chill in the refrigerator before serving.
