IMMY DEAN SOUTHWEST TACO BAKE
Yield: 8 servings
Prep time: 15-20 minutes
Bake time: 30 minutes
Oven temp: 350°F
INGREDIENTS:
1 roll (16 oz) Jimmy Dean Premium Pork Sausage (Regular or Hot)
1 cup chopped yellow onion
2 cans (14.5 oz each) diced tomatoes, undrained
1 can (15 oz) kidney beans or black beans, drained and rinsed
1 packet (1.25 oz) taco seasoning mix
1/2 cup water
10 oz restaurant-style tortilla chips, coarsely broken
2 cups (8 oz) shredded cheddar cheese or Mexican blend cheese
OPTIONAL TOPPINGS:
Sour cream
Sliced green onions
Chopped fresh cilantro
INSTRUCTIONS:
PREHEAT & PREPARE
Preheat oven to 350°F. Lightly grease a 13x9-inch baking dish with nonstick cooking spray.
BROWN THE SAUSAGE & ONION
In a large skillet over medium-high heat, cook the Jimmy Dean sausage and chopped onion for 8 to 10 minutes until the sausage is browned and thoroughly cooked, stirring frequently. Drain off excess fat and return the skillet to the stove.
SIMMER THE SOUTHWEST MIXTURE
Add the undrained diced tomatoes, drained beans, water, and taco seasoning to the skillet. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer uncovered for 10 minutes, stirring occasionally.
ASSEMBLE
Spread the coarsely broken tortilla chips evenly over the bottom of the prepared 13x9-inch baking dish. Sprinkle 1 cup of the shredded cheese over the chips. Spoon the warm sausage mixture evenly over the cheese. Top with the remaining with tortilla chips and 1 cup of shredded cheese.
BAKE & SERVE
Bake uncovered at 350°F for 30 minutes or until hot and bubbly. Let cool for 5 minutes before serving. Garnish with sour cream, green onions, or cilantro if desired.
