Ingredients Needed Ghee: 3 tablespoons Sunflower Oil: 2 tablespoons Whole Spices: Cardamom (ഏലക്ക): 3–4 Cloves (ഗ്രാമ്പൂ): 3–4 Cinnamon stick (കറുവപ്പട്ട): 4 small pieces Star Anise (തക്കോലം): 1 (optional) Bay Leaf (വഴനയില): 1 Cashews: A small handful Onion: 1 large (thinly sliced) Curry Leaves: A sprig Carrot: Chopped (required amount) Raisins: A small handful Water: 8 cups (hot water) Salt: To taste Lemon Juice: 1 tablespoon Jeerakasala / Kaima Rice: 4 cups (washed and drained) Detailed Recipe Instructions Step 1: Tempering Spices and Cashews Place a pressure cooker on medium heat and let it warm up. Add 3 tablespoons of ghee and 2 tablespoons of sunflower oil. First, add the whole spices: cardamom, cloves, 4 small pieces of cinnamon, star anise, and bay leaf. Sauté for a few seconds until fragrant. Next, add the cashews into the cooker and sauté until they turn light golden. Step 2: Adding Onions, Curry Leaves, Carrots, and Raisins To the same mix, add the large thinly sliced onion, curry leaves, chopped carrots, and raisins. Sauté on medium flame until the onions turn soft and translucent. Step 3: Adding Hot Water, Salt, and Lemon Juice Pour in 8 cups of hot boiling water directly into the cooker. Add salt to taste and 1 tablespoon of lemon juice (lemon juice keeps the rice fluffy and white). Mix everything well and let the water come to a boil. Check the salt (it should be slightly salty). Step 4: Adding Rice and Pressure Cooking Now, add the pre-washed and well-drained Jeerakasala rice (4 cups) into the boiling water. Give it a gentle mix. Close the pressure cooker lid with the weight/whistle on. Cook on medium flame for 1 whistle (or cook on low flame for 5 minutes after pressure builds up). Turn off the heat immediately and let the pressure release naturally for 10–15 minutes before opening. Step 5: Serve Open the cooker lid and gently fluff the rice using a fork or a flat spoon. Serve hot with chicken curry, beef roast, or pickle and salad.
