Homemade cottage cheese from scratch, live. One gallon of whole milk, three quarters of a cup of white vinegar, and a thermometer become fresh, creamy cottage cheese using Alton Brown's acid-set method. 279 episodes of Side Dish and this is the first time we have ever made actual cheese. Here's the whole trick: heat the milk to 180-190°F, stir in the vinegar off the heat, and watch a gallon of milk split into white curds and golden whey in about thirty seconds. Rest, drain, rinse, wring, salt, then dress the curds with heavy cream, buttermilk, and fresh lemon zest. That's it. That's cheese. The carton matters though: ultra-pasteurized milk will not set a proper curd, so read the label. The drink is the Gold Rush: bourbon, fresh lemon juice, and honey syrup, shaken hard and poured over one big rock. It's a modern classic invented around 2000 at a New York bar called Milk & Honey. Makes about a pound and a half of the freshest cottage cheese you will ever taste. The Drink: The Gold Rush 2 oz bourbon, 3/4 oz fresh lemon juice, 3/4 oz honey syrup (3 parts honey to 1 part warm water). Shaken hard, strained over one big ice cube. Acid-set fresh cheese goes back thousands of years to the first dairying cultures. Little Miss Muffet was eating her curds and whey in print by 1805. In 1918 the US Food Administration put up posters telling Americans to eat more cottage cheese to save meat for the troops. Richard Nixon famously ate it with ketchup. The diner diet plate almost killed its reputation, and then the internet brought it roaring back. Side Dish Science: How Milk Becomes Cheese Eighty percent of milk protein is casein, bundled into micelles that repel each other and keep milk liquid. Vinegar drops the pH toward casein's isoelectric point, the repulsion collapses, and the proteins crash together into curds. Why 180-190°F makes tender curds, why a boil makes squeaky rubber, and why ultra-pasteurized milk refuses to cooperate.
